I am thankful for oats. No gluten. Essentially. Maybe contaminants…

Anyway, using oats instead of cracker or something, I was able to enjoy meatloaf for dinner this evening. Yum! Hadn’t had Mom’s meatloaf in a while. Very tasty.

So often, contentment is nothing  more than enjoying and being grateful for the simple things in life. Like how incredibly special I am.

My mom doesn’t make meatloaf for everybody…

  1. Another gluten free alternative is to crush up those puffy rice crackers in your meatloaf. Works very well. I don’t do well with oats, even certified gluten free…oh how I miss my granola.

  2. I only use oats in my meatloaf. It’s the way my mom made it and it’s how she taught me. Good memories, good comfort food, for sure!
